Date Cake Squares
Makes 2 dozen squares
15% calorie reduction from
traditional recipe
1 cup chopped dates
3/4 cup chopped pitted prunes
1/2 cup dark raisins
1 1/4 cups water
8 tablespoons margarine, cut into
pieces
2 eggs
1 teaspoon vanilla
1 cup all-purpose flour
5 1/2 teaspoons Equal® Measure™ or
18 packets Equal® sweetener or
3/4 cup Equal® Spoonful™
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon gound nutmeg
1/4 chopped walnuts
ΓÇó Combine dates, prunes, raisins and
water in medium saucepan; heat to
boiling. Reduce heat and simmer,
uncovered, until fruit is tender and
water is absorbed, about 10 minutes.
Remove from heat and add margarine,
stirring until melted; cool.
ΓÇó Mix eggs and vanilla into fruit
mixture; mix in combined flour,
Equal®, baking soda, salt, cinnamon,
and nutmeg. Spread batter evenly in
greased baking dish, 11x7x2 inches;
sprinkle with walnuts.
ΓÇó Bake in preheated 350┬╛F oven
until cake springs back when touched
lightly, 30 to 35 minutes. Cool on
wire rack; cut into squares.
